      Last Sunday I made cheddar cheese...we made farmhouse cheese earlier this year but wanted to give the hard cheeses a go.

      Curds been drained.

      Looks good. Where did you get your milk?
      Iv got a raw milk farm not too far from me that makes amazing cheese

      Hi Mark,

      We do have a farm near us, not tried them yet. We got full-fat milk from Morrisons, and I added a pint of Jersey full fat. We want to try our hands at some of the soft cheeses, Dolcelatte is one of our favourites.....they only take around 3 months to mature.

      Definitely try fresh unpasturised if you can get it. The curd you get off raw milk is so much nicer. I couldn’t get mozzarella to work properly with supermarket milk, I switched to raw and BAM it was like being in Rome. Really makes you appreciate how flavourless the mozzarella we get from Tesco is.

      Iv not tried any long age hard cheeses yet, Iv done chèvre a few times because that just takes overnight to get that sourness.

      What culture do you use for cheddar?

      We will wait until after chrimbo when we move 5 miles up the road, to really get into cheese making.
